  • small handful basil, sliced thin or torn optional
  • salt to taste
  • pepper to taste
Peanut Dressing Ingredients
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons water or more as needed
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon garlic powder

Method
 

Salad Preparation
  1. In a large bowl, combine coleslaw mix, shredded chicken, scallions, red bell pepper, and peanuts.
  2. In a separate bowl, whisk together peanut butter, water, soy sauce, lime juice, honey, sesame oil, ginger, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Add cilantro and basil if using, and mix gently.
  5. Serve immediately or refrigerate until ready to serve.
