Prepare the Chocolate Sponge Cake
- Preheat the oven to 350°F (175°C). Grease and line a cake pan with parchment paper.
- In a mixing bowl, combine flour, sugar, cocoa powder, and baking powder.
- In another bowl, whisk together melted butter, eggs, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- Pour the batter into the prepared pan and bake for 25 minutes. Let cool completely.
Make the Dark Chocolate Mousse
- Melt dark chocolate in a double boiler. Let cool slightly.
- In a bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate and vanilla.
- Fold in whipped cream until fully incorporated.
Make the Milk Chocolate Mousse
- Melt milk chocolate in a double boiler. Let cool slightly.
- In a bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate and vanilla.
- Fold in whipped cream until fully incorporated.
Make the White Chocolate Mousse
- Melt white chocolate in a double boiler. Let cool slightly.
- In a bowl, whisk egg yolks and sugar until pale. Stir in melted chocolate and vanilla.
- Fold in whipped cream until fully incorporated.
Assemble the Cake
- Layer the dark chocolate mousse over the cooled sponge cake.
- Add the milk chocolate mousse on top of the dark chocolate layer.
- Finish with the white chocolate mousse layer. Refrigerate for at least 2 hours before serving.
