Ingredients
  

Zucchini Noodles
  • 4 medium zucchini spiralized
Sauce
  • 2 tablespoons olive oil for sautéing
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon basil dried or fresh
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1/4 cup parmesan cheese grated
  • 1/4 cup fresh basil chopped

Method
 

Prepare Zucchini
  1. Spiralize the zucchini using a spiralizer to create noodles.
Cook Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add cherry tomatoes, basil, salt, and pepper. Cook for 3-4 minutes until tomatoes soften.
Combine
  1. Add the zucchini noodles to the skillet and toss to combine with the sauce. Cook for an additional 2-3 minutes until noodles are tender but still firm.
Serve
  1. Serve immediately, topped with grated parmesan cheese and fresh basil.
